Can a blade be fixed if it has a large chip?
Yes.
However, the blade will be smaller than the original size.
Can you fix badly rusted blades?
Yes.
We leave Kurouchi ( black part ) as much as possible since Kurouchi is the oxide film preventing rusting.
Can a bent blade be fixed?
If you put undue pressure on the thin-bladed knives, the edge may bend.
These knives are not designed to stand too much pressure.
Our Aogami steel knives are made of very hard steel (AS, A2 ) which is difficult to sharpen, therefore blade is covered with softer iron for easy sharpening.
As a result, it can be bent easily.
As time passes (about one year), the blade becomes hard. We send knives after manufacture, so the blade can bent easily.
It might be possible to straighten it yourself.
Of course, if you send us your knife, we'll be happy to fix it
Kurouchi ( black ) surface comes off. Could you restore it?
No, it's impossible since kurouchi surface is the result of a chemical reaction.
The Kurouchi surface is covered by an oxide film made during the Hardening process. After hardening and tempering, the knives will become distorted. Therefore we carefully correct the distortions with a special hammer.
Depending on the blade ( especially larger blades ), some kurouchi oxide film comes off during the removal of distortions.
The rest of the black parts can gradually disappear with repeated sharpening, but we leave it unpolished because being coated by on oxide film, it doesn't rust easily.
We add some oil to the parts where the kurouchi came off.
It depends on how you use and maintain your blade, but there's a possibility that Kurouchi blade will change to look like a Migaki over a long period of time.
The blade has terrible rust. How to fix it?
Get rid of rust using a cleanser ( polishing powder in kitchen detergent ).
Then oil ( camellia oil is best. ) the blade and store it in a dry place.
What's the best grid of whetstone to keep a fine edge?
We recommend 1,000 grid for the standard use.
Can I use any sharpening tool for Wa-bocho ( Japanese knives )?
Yes,
any standard sharpening tool can be used.
What is the best angle for sharpening double-edged knives?
It depends on the size of the blade. For regular size,
it's about10 degrees ( 5 degrees per side ).
